Sour Cream Potatoes

Ingredients
6 medium potatoes
2 cups of shredded cheddar cheese
¼ cup butter
1 cup sour cream
¼ cup chopped onion
1 teaspoon salt
2 tablespoons butter
¼ teaspoon pepper

How To Cook
1. Preheat oven to 350 degrees.
2. Cook potatoes in skins, cool, peel and shred coarsely.
3. In sauce pan on low heat combine cheese and butter until almost melted.
4. Remove from heat, blend in sour cream, onions, salt and pepper.
5. Add potatoes, stir in lightly and put into buttered 1 ½ quart casserole.
6. Dot with butter and bake for 25 - 30 minutes.
