Ingredients + How To Cook 1. Preheat oven to 400 degrees. 2. Lightly grease bottom only of muffin tins. 3. Streusel - combine and mix well: ¼ cup Quaker Oats (uncooked) 1 tablespoon firmly packed brown sugar 1 tablespoon butter, melted, 1/8 teaspoon pumpkin pie spice* 4. Muffins - combine and mix well: 1 ½ cup all purpose flour 1 cup Quaker Oats (uncooked) ¾ cup firmly packed brown sugar 1 tablespoon baking powder ½ teaspoon baking soda 1 ½ teaspoon pumpkin pie spice* ½ teaspoon salt (optional) ½ cup chopped nuts (optional) 5. Combine and add to dry ingredients 6. Mix just until dry ingredients are moistened: 1 cup Libby's solid pack pumpkin ¾ cup milk 1/3 cup vegetable oil 1 egg, lightly beaten 7. Fill muffin cups almost full; 8. Sprinkle streusel over batter, patting gently. 9. Bake 22 - 25 minutes or until golden brown. 10. Let muffins stand a few minutes; remove from pan. *To make your own pumpkin pie spice: ¾+ teaspoon cinnamon, ½+ teaspoon ground ginger, ¼+ teaspoon ground cloves |
