Oatmeal Lace Cookies

Ingredients:
2 ½ C oatmeal
2 t baking powder
1 C dark brown sugar
½ c vegetable oil
1 beaten egg
½ t almond extract

How to Cook:
1. Preheat oven to 350 degrees ferenheit
2. Stir with spoon in bowl.
3. Drop from spoon onto baking sheet.
4. Bake about 10 minutes at 350 watching carefully so they don’t burn.
5. Let cool so the cookie holds together.

TIPS: Use hand beater for the egg. You don’t need a mixer for the batter. It’s very easy to just stir the batter together with a spoon.
Spoon out the batter with a tablespoon measuring spoon, turning it upside down carefully on parchment paper on the cookie sheet so the oatmeal flakes stay together.
When it bakes, the brown sugar melts and holds the cookie together, so you need to bake it long enough to melt the sugar but not burn it.
Once cooled, lift carefully onto a serving plate and they hold together nicely.
If not baked long enough, the cookie tends to break apart.
There’s no substitute for the almond flavoring which gives the cookie its wonderful flavor.
