Cheese Cake (School Recipe)

Ingredients
Crust
½ pound graham Cracker crumbs
5/8 cup melted butter
¼ cup sugar

Filling
½ cup lemon Jello - (one small package)
½ cup sugar
1 cup hot water
Cheese Mixture
1 can evaporated milk (partially frozen)
8 oz. cream cheese
½ cup sugar
1 teaspoon vanilla

How To Cook
1. Make the crust in the bottom of a 13 x 9 inch pan using most of the crumb mixture.
2. Set aside some crumbs.
3. Mix the ingredients for the filling together and place in the freezer until partially set.
4. Pour the milk into a bowl and place it also in the freezer until it forms ice crystals around the edges.
5. When ready, remove the partially frozen ingredients and beat them separately until the Jello is frothy and the milk becomes stiff and forms peaks.
6. Mix the cheese, sugar and vanilla into the thickened milk and then fold in the frothy Jello.
7. Pour all into the crust, sprinkle some crumbs on top and refrigerate over night.
